Contest judges found the King resident’s recipe to be both tasty and original. Second place went to Marisol Rogers of Brown Summit for her Topped Eggplant, “an interesting combination of baked eggplant topped with chicken, beans, vegetables and fruit.” Rainbow Vegetable Melange Parmesan by Nancy Dentler of Greensboro was the third-place winner.
The contest, held during National 5-A-Day Month, was designed to encourage people to incorporate more fruits and vegetables into their diets. Recipes could be submitted for any type of dish, as long as it contained at least three kinds of produce.
Numerous studies indicate that a diet featuring lots of fruits and vegetables can lower the risk of cancer, diabetes, stroke and coronary heart disease. That’s why it’s recommended that people eat “5-A-Day,” at least five servings of fruits and vegetables.
“The Good For You Recipe Contest is a fun way to encourage people to find interesting ways to prepare fruits and vegetables,” said Lowes Foods Nutritionist Cindy Silver.
“By sharing the winning recipes, we hope that others will be inspired to add more produce to their meals.”
